I have a confession to make...I haven’t run since my 5-mile accomplishment on Saturday.  :(  The problem with living in Virginia in the Winter is that its cold.  Really cold.  I know I’m a wimp to complain about 20* weather when so many of you live in places FAR colder but you have to understand that I grew up in Florida...this whole temperature getting below 50* in the Winter is still fairly new to me.  Each day this week I have planned on running, and each day I have chickened out.  Maybe its because the window in my office is so drafty that I have to wear my wool coat and scarf all day, and even then my poor little fingers are still icicles.  Or maybe its because when I get home all I want to do is create a meal that will be so satisfying and hearty that I will be warmed from the inside out after consuming it, like last night’s Ravioli Lasagna and Brussels Sprout Spaghetti. 090114-d13 This idea came from Tina at Carrots & Cake, and originally from Real Simple magazine (I couldn't find a recipe link).  Lasagna noodles and ricotta are replaced with prepared ravioli pasta...I chose 365 Brand frozen 5 Cheese Ravioli. 090114-d32 The raviolis are layered with pasta sauce (also 365 Brand), frozen spinach (thawed, excess water squeezed out) and part-skim mozzarella.  There are so many variations that could be played with.  I was thinking about an amazing portobello ravioli that a local pasta shop creates and how good that would be layered with additional mushrooms, olives and capers...yum! 090114-d41 Were I to create the lasagna for a dinner party again I would probably use fresh ravioli in lieu of the frozen.  This would make the cost of the dish significantly higher, which is why I would reserve it for special occasions only.  The frozen raviolis were good, just chewier than fresh would have been.  Even with frozen raviolis this dish is more expensive than a classic lasagna with noodles would be, but its a fun take on a classic favorite that I will surely make again. Basic Ravioli Lasagna (I encourage you to try different variations...next time I will add more veggies) Ingredients:
  • (3) 8oz packages of fresh or frozen ravioli
  • (1) jar of pasta sauce
  • (1) 10oz package of frozen spinach, thawed and squeezed to remove excess liquid)
  • 1-1/2 cups shredded part-skim mozzarella
Method:
  1. Ladle 1/2 cup of sauce into bottom of 9x9 glass baking dish.
  2. Layer one package of ravioli on top of sauce.
  3. Top with 1/2 of spinach and 1/2 cup of mozzarella.
  4. Ladle 1/3 of remaining sauce over mozzarella.
  5. Repeat steps 2-4.
  6. Layer last package of ravioli on top of sauce.
  7. Ladle remaining 1/3 of sauce over ravioli and top with last 1/2 cup of mozzarella.
  8. Bake at 350* for about 20 minutes, until lasagna is bubbly and top layer of cheese is just starting to brown.
090114-d51 While the lasagna was baking I worked on a new brussels sprouts recipe.  Our go-to method for cooking brussels has been to roast them, and I'm getting a little tired of it.  We have them weekly, so I wanted to play around with different methods of preparing them.  A friend of mine told me about a recipe he and his wife cook often, where you slice the brussels into 1/8" pieces, essentially turning them into a slaw-like consistency.  You then sauté them in butter, toss them with linguine and serve.  I was intrigued, so we tried it. Brussels Sprout Spaghetti Ingredients:
  • lots of brussels...we probably had 20 medium-sized
  • 1 shallot, minced
  • 1 tbsp butter
  • whole wheat pasta (I used spaghetti, but will use angel hair next time)
  • juice from 1/2 a lemon
  • parmesan cheese, shaved
Method:
  1. Boil the pasta until soft.
  2. Meanwhile, saute' the brussels and shallot in 1/2 the butter until fragrant and beginning to brown.
  3. Drain the pasta and add to the brussels pan.  Add the last 1/2 of butter and toss all together. Season with salt and pepper to taste.
  4. Serve with shaved parmesan on top.
090114-d61 This dish was delicious, although I will definitely reduce the amount of pasta used next time, and will probably substitute angel hair for the spaghetti noodles.  The shaved parmesan really makes the dish, and I think it would be divine with bacon or pancetta added in. 090114-d72 090224-d81 The evening was delicious, warm and satisfying.  But if I'm going to keep making dishes like this, I have to get over my fear of the cold and get back on the road for some runs!  Here's hoping the weather warms soon...

spudnut!

Last night as I was setting my alarm before bed I told the hubb I'd be getting up early to practice some yoga.  He laughed and told me that no, it was far more likely that when my alarm sounded he'd roll over to cuddle me and convince me to turn it off.  Well, he was right.  No yoga for me this morning...but it sure felt good to sleep in a little!  I hit snooze every 10 minutes for a full hour.  Do any of you do that?  I like to wake up slowly so I always set my alarm for 20-30 minutes earlier than I actually need to get up so that I can hit snooze a couple of times.  Is that strange? I've done it since high school.  Its gotten worse now because I will literally hit snooze for a full hour (like I did this morning).  Each time it goes off I wake up a little bit more.  I'm just not a jump right out of bed when the alarm sounds kinda girl... Anyway, I made up for my lack of yoga this morning with 50 minutes of yoga this evening.   It felt great, and now I feel good and stretched out for my 3-1/2 mile training run tomorrow morning!  :) Today's eats: Breakfast:  Ezekiel Cinnamon Raisin muffin with 1-1/2 tbsp almond butter, sliced apple and cranberry ketchup!  Oh my...this was delicious!  I love the Ezekiel Muffin/nut butter/fruit combo...it keeps me so satisfied! 081219-b1 081219-b2 Several of you have asked for the cranberry ketchup recipe, which I got from Erin at Care To Eat. I've asked her permission to post, so if she says yes I will hopefully have it up tomorrow!  If you can't wait though, just send her an email and I'm sure she'll give it to you, she's a sweetie! Morning Snack:  I didn't need a snack because my super-hearty breakfast kept me happy through the morning.  But when my hubb brought me a donut from his office, I just couldn't resist!  Actually, it was a spudnut...even better.  Have you ever heard of a Spudnuts?  I hadn't before moving to Charlottesville. Apparently Spudnuts used to be all over the country but I thought that ours was the last in existence, until finding the above website that states there are still 35 locations spread across the USA. Here's ours... spuddies (image from here) A spudnut is a donut made with potato flour, and they are heavenly.  Better than a Krispy Kreme any day of the week...  I chose a glazed spudnut with shredded coconut on top.  YUM.  It had been so long that  I forgot how good they are.  Indulgent.  :) Lunch:  Whole wheat pita stuffed with TJ's edamame hummus, alfalfa sprouts, broccoli slaw and red bell pepper, along with TJ's split pea soup.  I didn't eat the second 1/2 of my pita...perhaps because I was full of spudnut?!?!?  The TJ's split pea soup was pretty good.  I honestly have nothing to compare it too....I'm pretty sure this was my first split pea soup experience ever! Surprising for a girl who loves her soup... 081219-l1 Snack:  I'm in fridge/freezer/pantry clean-out mode, and it was driving me crazy this morning that I had just a little Kashi H2H left in the pantry but didn't want cereal for breakfast.  So, I added it to the trail mix that the hubb made me last week and brought the tub to the office to live. 081219-s1 It contains: Kashi H2H, mixed nuts, dried cherries, pineapple and pears, and crystalized ginger.  I had about 1/2 a cup of the small stuff and one dried pear. Dinner:  Veggie Bean Chili a la my hubb...he's the best!  We had it over brown rice pasta, with a little sprinkling of cheddar on top.  I also had a glass of Meridian Cabernet...this is one of our favorite wines for every day. 081219-d1 081219-d2 Well, I officially have 3 full days left before leaving for Florida Tuesday morning!!!  Soooooo excited, but this weekend is going to be ridiculously busy so my posting may be minimal...  Here are a few To Do's:
  • training run (3-1/2 miles!)

  • finish knitting
  • finish last minute shopping
  • make christmas gift boxes for c'ville friends (bark, marshmallows and hot cocoa mix)
  • finish wrapping presents
  • laundry and packing

  • the hubb's company party monday night (hence all the packing happening this weekend)
I know you're all really busy too and I hope that you all accomplish the enormous lists that you've made yourselves!!!  What's on your agenda this weekend? What a day.  My brain is completely fried after an exhausting + frustrating 9 hours in the office.  I'm so glad that the hubb and I got up and ran this morning, there is no way I would have felt up to it tonight!  We ran a lovely 2 miles, with 1/4 mile warm-up and cool-down, for a total of 2-1/2 miles.  We're finally sticking with the weekly mileage in the training program so there will be a bigger difference between our long Saturday runs and our mid-week training runs.  We are bumping to 4 days of running per week too, up from 3, which I'm excited about!  I did pop my favorite power yoga dvd in the player for 45 minutes of strength training after work, followed by 15 minutes of crunches.   Here's a quick daily eats recap: Breakfast:  An Ezekiel cinnamon raisin muffin with 1 tbsp almond butter and a banana. 081216-b1 Lunch:  A whole wheat pita stuffed with 2 tbsp TJ's edamame hummus (YUM!), broccoli slaw, yellow bell pepper and cucumber, along with an Oikos blueberry yogurt.  This was my first blueberry Oikos experience...I literally got THE LAST OIKOS on the shelf at Harris Teeter.  Below the empty shelf was a sign that explained that they wouldn't be stocking Oikos for a short period due to a manufacturing problem.  I guess I owe my Whole Foods a blog apology for ranting about them last week...   :P  Anyway, the blueberry was pretty tasty but I really miss my honey flavor!!! 081216-l1 081216-l2 Snack:  A 12oz skim latte from my favorite coffee shop downtown and 1/2 a honeycrisp apple.  This apple was really disappointing as all my store-bought apples have been lately, I guess the season is finally over...  :( 081216-s1 Dinner:  Baked chicken, roasted veggies  (brussels, potatoes + golden beets) and Near East Whole Grain Blends (chicken + garlic). 081216-d1 081216-d2 Dessert:  Definitely breaking back into the chocolate covered strawberries in a little bit... trader joe's and daily eats recap

Hello!!!  So so so sorry I've been m.i.a. the last couple of days...  Monday night I was at work late trying to prepare for my project meeting in Raleigh on Tuesday, and Tuesday I drove 4 hours each way to Raleigh and back so was completely exhausted by the time I got home at 9pm.  I have LOTS of catch-up to do, but before I get into my eats I wanted to report about My First Trader Joe's Experience!!! I stopped at a brand new store in Richmond on my way home from Raleigh.  I'm excited because this store is right next to a huge shopping area that we visit every now and then only about 50 minutes from our house, so I think we'll be able to make Trader Joe's stops every couple of months at least!  The store was a lot smaller than I expected, and I didn't realize that they carry mostly Trader Joe's brand, which explains the smaller store. You all gave me such GREAT suggestions and I was able to get most of them!  I didn't get any frozen stuff because I had a bit of a drive ahead of me and knew it would probably thaw, but I did stock up on wine and non-perishables, and a couple of cold things 'cause I bought a TJ's cold bag!  Here's my loot... tj-1

I'm so excited to try out all of these new products!  Especially since I've been reading about most of them on your blogs for months now!  I broke into the dark chocolate covered candy cane joe joe's on my way home from Richmond...oh. my. goodness.  Those beauties are little pieces of heaven in cookie form.  I don't have a picture since I was driving and it was dark, but I'm sure I'll be featuring them in the next week!  :) Now to back track a little, all the way to Sunday night.  My hubb was kind enough to make an AWESOME meal while I was working on my BSI: GINGER round-up post. Sunday Dinner:  Homemade Chicken Veggie Soup with Homemade Veggie Broth...YUM!!!  I'll post the recipe in a separate post later today, this post will get way too long if I include all my recipes too!  I also made whole wheat bread for the very first time without a bread machine!!!  I'm quite proud because the loaves turned out beautifully. 081207-d7 081207-d8 081207-d6 I made two loaves, so I sliced one and put it in the freezer for later. 081207-d9 Sunday Dessert:  Becca's award-winning Ancho Ginger Applesauce!  :) 081207-d10 Snacks:  I of course snacked on some of the baked goods I made throughout the day. I think I wound up eating two of VeggieGirl's Pear Pistachio Ginger Blondies and one of Jessica's Chocolate Gingerbread Bars.  No pics...sorry!  I need to get better about my baked good / snack consumption...I've been going a little overboard.  :( Monday Breakfast:  Toasted Ezekiel Cinn Raisin Muffin w/ 1 tbsp almond butter and sliced banana, the rest of the banana on the side. 081208-b1 Monday Lunch:  1/2 a leftover enchi-rito and a spinach salad with yellow bell pepper, cucumber and lite ranch dressing. 081208-l2 081208-l1 Snacks Monday:  My lunch calories were a little light (surprising I know, but the enchirito really isn't bad for you!) so I was hungry for this beautiful pear a couple of hours later.  I also grabbed one of the chocolate gingerbread bars that I brought into the office to share with my co-workers. 081208-s1 081208-s3 And because I was in the office until about 8:30, I ate 1/2 of this Clif Builder's Bar at 6:30 to keep myself from eating more choco. gingerbread bars... (iphone pic, sorry!) 081208-s2 Monday Dinner:  My hubb came to the rescue again with a fabulous quiche!!! I'll post this recipe later too...it was SO YUMMY!  And I was starving by the time I got home so I had 1/4 of it, along with a glass of chardonnay (no pic...). 081208-d2 And for dessert a molasses clove cookie (see what I mean about the sweets!?!?!?) 081208-d3 We're almost there!!!  Thanks for hangin' in there for this LONG post!  :) Tuesday Breakfast:  Toasted Ezekiel Cinn Raisin Muffin with 2 tbsp PB...I wanted to make sure I wouldn't get hungry on my drive and be tempted by a Starbucks baked goodie!  Also, a banana.   081209-b1 I managed to get PB all over myself while driving.  It was dark and I had no idea until the sun came up...pathetic.  :P Tuesday Morning Snack:  I stopped at Starbucks for a grande non-fat chai latte about halfway through my morning drive. 081209-s1 Tuesday Lunch:  We all went out to a fantastic Vietnamese restaurant where I ordered grilled tofu on lemongrass vermicelli noodles.  It was AMAZING but I have no pictures because it was definitely not appropriate to pull out my iphone with the entire team of architects and engineers present.  It was sooooo good though... Tuesday Afternoon Snack:  My hubb was so sweet and made me a very special trail mix to snack on during my long drive...he even took the pictures for me so that the note stayed a surprise.  He's the best!!!  :)  I had a handful of the mix on my way home. 081209-s2 Tuesday Evening Snack:  One glorious dark chocolate covered joe joe... 081209-s3 Tuesday Dinner:  Leftover quiche and a spinach salad with hearts of palm, red bell pepper, cucumber and lite ranch dressing.  And a much-needed glass of cabernet after my long day. 081209-d1 081209-d2 Whew!!!  Thanks for sticking with me!  I'll be back later tonight to post today's eats and the two dinner recipes I promised.  I feel so out of the blog loop because I haven't read any since Sunday!!!  I hope to get caught up tonight...  Have a great day!  :)

Good morning!  Man, yesterday was a whirlwind!!!  I had so many fun things to blog about that I completely forgot to mention my evening run, or the fact that yesterday was my one-month blogiversary!  I can't believe its been a whole month since I signed up for Bella Eats one Friday afternoon...completely on a whim.  It has been an amazing experience for me so far, and I can't wait to see how the blog grows and changes over time.  Thank you all for being so supportive and fun to get to know, I appreciate each and every one of you and encourage you all to speak up if you have any comments or suggestions! Not only has the blog been creatively and emotionally fulfilling for me, but it has also done wonders for me physically!  I feel like I have been able to apply all of the great tips and techniques that I've been learning from other food bloggers out there, and can honestly say that my body feels and looks better than it did one month ago!  I can say this because today I am wearing a pair of dress pants to work that I haven't been able to wear in 6+ months...and they fit perfectly!  Woohoo!!!  :)  I am excited to see my body continue to grow stronger and leaner, especially as I continue to increase my running mileage and gain even more flexibility through my yoga classes. On to food... fabulous friday

Good morning bloggies!!!  It is a gorgeous day outside...freezing, but beautiful!  Its making me so happy right now to look out the window at the pretty blue sky.  We've had a couple of gray days here this week so this is a very welcome change.  I am in a fabulous mood!  :) Today is an exercise rest day for me...Yay!  Not that my workouts are terribly intense during the week (at least until I increase my mileage a bit more) but I've worked out every day since last Friday and decided that after yesterday's big activity day, my body deserves a break.  Plus, tomorrow is my long run with the training group, so its good to have a rest day before that. A question for all of you spinning ladies out there...when does your bootie get used to  that hard bike seat?!?!?  I woke up so sore this morning, not in my legs or gluts, but as my yoga instructor says, my "sit bones"!!!  Ouch.  Good thing my office chair is cushy! So, on to food.  This will be a quick post because Brian and I were in a rush this morning and decided to have lunch out today instead of packing something to bring to work.  I'll try and post after lunch, but if I can't then I will definitely include lunch in my dinner post tonight. Breakfast: 1 Ezekiel Cinnamon Raisin english muffin smeared with 1.5 tbsp almond butter and 1/2 an apple.  The rest of the apple on the side. 081121-b1 This was a very tasty combination, I'm quite happy right now after finishing it.  :) I got the sweetest message yesterday from Elise at Elise's Eats!  She has just started her own blog after following food blogs for some time now.  It looks great so far, and I'm looking forward to watching it develop!  Welcome, Elise!
