applesauce pancakes

Happy Saturday everybody!  I hope you're all enjoying a relaxing weekend recovering after all the holiday festivities.  We got all of our Christmas decorations put away and did chores around the house this afternoon, I'm finally feeling like life is returning to normal.  I like having a routine!  :) This morning I woke up craving one of my favorite breakfasts, Applesauce Pancakes.  They are a much healthier version of the traditional pancake, but they take a little more effort to make so they seldom make an appearance on our table.  Not that they are difficult, just more difficult than opening up a box of Dr. Oetker's Organic Pancake Mix and adding egg and milk... Breakfast:  3 Applesauce Pancakes topped with 1-1/2 clementines and cranberry ketchup and 1/2 a pink lady apple (I found them at Whole Foods!) 090103-b1 090103-b2 Here's the recipe...the original came out of a cookbook from the hubb's nana, but I've modified it so much over the last few years that I think I can call this one mine now. Applesauce Pancakes makes about 1 dozen "silver dollar" pancakes Ingredients:
  • 1 cup white whole wheat flour
  • 1 tbsp turbinado sugar
  • ½ tsp salt
  • ¼ tsp cinnamon
  • 1-1/4 cup applesauce
  • 1 tsp orange zest, grated
  • 1/2 tsp vanilla extract
  • 2 egg yolks, beaten
  • 2 egg whites
Method:
  1. Sift together dry ingredients in large mixing bowl.
  2. Blend applesauce, orange zest, vanilla and egg yolks in separate bowl, then add to dry mix.
  3. Beat egg whites until stiff but not dry, then fold into batter.
  4. Ladle batter onto a lightly oiled hot griddle, to desired pancake size.
  5. Cook until small bubbles form throughout, then turn to brown the other side.
  "stiff" egg whites going into batter "stiff" egg whites going into batter Breakfast was really late today because the hubb and I slept in.  :)  This afternoon we went for our 4-mile training run...it was AWESOME!!!  I was so worried because our running has been so sporadic with prepping for the holidays then being out of town for a week...we'd really gotten off of our training schedule.  I mapped out a 4-mile loop for us that took us through our neighborhood, past the university, down Main Street and back to our house so it was nice and interesting for most of the way. Oh how I missed the variety of my familiar C'ville runs!!!  And, I am SO PROUD of my hubb!  He set a Personal Distance Record for himself today!!!  Yay Hubb!!!  :) Tonight we are going over to some friends' house for an early dinner, and since my breakfast was so late I decided on a light lunch after my run. Lunch:  Salad with romaine, spinach, red bell pepp, broccoli, roasted garlic hummus, 1/2 tsp of grapeseed oil and 1 tsp balsamic vinegar. 090103-l1 And a Clif chocolate chip ZBar...cause I felt like a little "dessert".  :) 090103-l2 Alrighty bloggies, I'm off for some good food and good company.  I hope you all have a fantastic evening!  :)

back to the grind for just one day

Can every work week be just one day long?  It was strange to get up this morning at 6am after two weeks of sleeping until 8am, but I managed.  Did anyone else have to work today?  I felt like I was the only one, even my one co-worker called in sick.  My boss was nice enough to tell me to go home at 4pm (we normally leave the office at 6pm), so I was able to run a few errands before picking up my hubb and heading home.  One of my errands involved an exciting new purchase which I am sure I will post about this weekend so you'll just have to wait...  :) Breakfast:  3/4 cup Flax Plus Pumpkin Raisin Crunch cereal from Nature's Path with 3/4 cup Hemp Milk and 1/2 a banana sliced.  On the side, the other 1/2 banana with 1 tbsp almond butter. 081231-s1 I'm ready to use up this cereal.  Its good, but it has more calories per serving than I typically look for in a cereal and doesn't keep me full for very long.  I'm getting close...  The hemp milk is really good.  It is thinner than soymilk, and has a slightly sweeter flavor.  I still think that I prefer soymilk but the hemp is nice to keep around because it doesn't have to be refrigerated before opening.  Its my back-up milk. 090102-b11 Lunch:  Leftover black-eyed peas on brown rice and the last of the roasted veggies. 090102-l1 Mmmm.  Warm and satisfying.  Have I mentioned that my office is freezing?  Actually, we blast the heat, but I sit right by the really old and poorly-insulated windows that let every 35* draft in.  So one side of me sits in a sauna all day while the other side of me turns into an ice cube.  Its miserable, but my boss is working on getting the windows replaced so I'm trying to be a good sport.  There are some days when I never take off my wool winter coat and scarf all day long... Snacks:  I spread 2 clementines and a peanut butter cookie Larabar throughout the day.  I also had 3 brazil nuts and 2 mugs of Sugar Cookie Sleigh Ride tea (to try and thaw myself out). 090102-s2 Oh. My. Goodness.  Now I know why you all have been raving about the PB Cookie Larabars!!!  I couldn't find this particular flavor for the longest time, but while searching for some gifts the week before Christmas I happened to run into a store I don't visit often and found this beauty on their shelf.  It was amazing!!!  The only ingredients?  Dates and peanuts.  I'm in love.  I had every intention of eating just 1/2 the bar but couldn't stop once I started.  These could be really dangerous...luckily they are good for me! 090102-s1 Dinner:  Another bowl of black-eyed peas on brown rice.  Shockingly I haven't tired of these yet! Don't be surprised if you see a repeat tomorrow, but after that I'm freezing the remainder.  They'll make a great lunch in a couple of weeks. 090102-d21 I also made a big salad with romaine, spinach, cucumber, yellow bell pepp, green olives and feta cheese.  I added a glob of roasted garlic hummus on the side because it sounded tasty, and drizzled the salad with 1/2 tsp grapeseed oil and 1 tsp moscatel wine vinegar. 090102-d1 Dessert:  Our dear friend Kelly, whose husband Steve was the guest of honor at the New Years Eve Surprise Birthday Party we unfortunately had to miss, brought us a plate of leftover birthday cake today!  My biggest weakness in the whole culinary world is cake.  I LOVE CAKE.  Who doesn't?  Cake tops cookies, pies, brownies and ice cream on my list of favorite sweets.   090102-d3 I started off with just the 3 bites you see missing in the photo above.  I promptly put the plastic wrap back on the cake, slid it to the back of the kitchen counter and turned off the kitchen light as I went to the living room to join my hubb for some Friday night t.v. watchin'.  I thought I was safe.  Then, the hubb disappears to the kitchen and comes back with the plate of cake and a fork.  I was powerless to stop him from handing me the fork after every third bite of his.  I just can't help it.  We did scrape off most of the icing because it was too thick and sweet, so I feel slightly better about the whole thing.  But now I have mega motivation to get out the door tomorrow for a run.  :P Exercise:  Before dinner tonight I pulled out my favorite yoga DVD for 30 minutes of intense stretching.  I wouldn't call it a power yoga session because I wasn't sweating, but I was definitely working my whole body and feel so much better now for it.  It had been two weeks since my last yoga practice and I was really feeling the need to get back into it.  Afterwards I did 10 minutes of ab work in various positions.   Tomorrow is a long run day and I feel stretched and ready to go.  I'm nervous because my longest run in the last 3 weeks was 2-1/2 miles while in Florida.  Eek!  I didn't realize it had been that long since our 3-1/4 mile run.  Now I'm really nervous.  We were supposed to run a 5k on New Years Day but weren't up for it after all the traveling and dog sickness etc.  I think I'm going to plan on a 4 mile run tomorrow, a 4-1/2 mile run mid-week, along with a couple more shorter runs and then hopefully be back on track for the 5 mile run scheduled for next weekend.  Scary! Alrighty, I have a date with my hubb and a movie.  Anybody have any exciting plans for this weekend or are you all just recovering from the holidays like we are?

on the right foot...

I started the first day of 2009 right...with a bowl of oats.  I've missed my oats these past few weeks as I've been cleaning out the fridge, freezer and pantry. Breakfast:  1 cup prepared rolled oats, a splash of hemp milk, a dash of vanilla, a small handful of raisins and 1/2 an apple sprinkled with cinnamon and turbinado sugar.  On the side a piece of whole wheat bread smeared with 1 tbsp almond butter and a drizzle of cranberry "ketchup". 090101-b1 The hubb and I lazed around the house most of today, it was lovely.  I caught up on some blogs, but not nearly as many as I need to!  Maybe tonight I can finish up...  Before going out for some errands today I made a quick lunch to keep me from stopping for something I would regret. Lunch:  A big ol' salad with romaine, spinach, yellow bell pepp, cucumber, dried cranberries, some crumbled feta cheese and light ranch dressing.  090101-l1 On the side, a Stoneyfield Farm yogurt.  I can't wait for my Oikos to return to the shelves!!!  I did pick up some Fage yesterday but want to finish up the last couple Stoneyfields I already had in the fridge before they go bad. 090101-l2 Snack:  One of our errands today included a stop at Target.  I was feeling light-headed and a little nauseous so I picked up a Luna Peanut Butter Cookie bar.  It tasted ok, but did help me feel much better. Has anyone else ever heard that eating black-eyed peas on New Years Day will bring good luck in the upcoming year?  I can't remember when or where I heard this, but yesterday as I was making our grocery list I thought that black-eyed peas sounded like a fantastic idea.  Who can't use a little extra luck in the new year?!? Dinner:  Black-Eyed Peas on brown rice, maple roasted beets, carrots and brussels sprouts and oil-free cornmeal muffins.  Say goodbye to my lovely tree...I think this post will be its last appearance.  :( 090101-d7 I soaked about 1 pound of dried black-eyed peas in water for about 4 hours this afternoon.  After rinsing the peas, I returned them to a large stock pot and covered them with 8 cups of chicken stock (about 1" of stock over the peas). I added
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 2 ham steaks, chopped
  • salt + pepper
brought to a boil, and let simmer for about 30 minutes. At this point, to my surprise, the peas were done! I wasn't ready for them yet so just kept them on low heat on the stove.  If you don't have the hours to soak ahead of time, you could skip the soaking step and just cook the peas on the stovetop for 2 hours. 090101-d4 090101-d8 For the roasted veggies, I chopped
  • 1 large carrot
  • 3 small beets
  • about a dozen brussels sprouts
and drizzled them with about 1 tbsp of olive oil.  They went into the oven on 400* for 30 minutes.  I pulled them out and drizzled maple syrup across the veggies, tossed them, and stuck them back in the oven for an additional 10 minutes. 090101-d5 They weren't quite as maple-glazed as I would have liked for them to be...I'll add more syrup next time. The Oil-Free Cornmeal Muffins are a recipe I adapted from one of my favorite baking books, Sweet & Natural Baking by Mani Niall.  I was looking for a quick corn muffin recipe because corn bread and black-eyed peas belong together.  This one did not disappoint, I loved it! 090101-d1 090101-d2 The muffins don't crumble like traditional cornbread, but they are wonderfully flavored and very moist. I will definitely be making them again! 090101-d3 I enjoyed my muffin with a bit of Earth Balance spread. 090101-d6 Oil-Free Cornmeal Muffins [adapted from Sweet & Natural Baking by Mani Niall] makes 8 muffins Ingredients:
  • 1-1/2 cups white whole wheat flour
  • 1/2 cup yellow cornmeal
  • 2 tbsp turbinado sugar
  • 3/4 tsp baking soda
  • 1/4 tsp fine sea salt
  • 1/2 cup agave nectar
  • 1/2 cup buttermilk
  • 2 large eggs
Method:
  1. Position a rack in the center of the oven and preheat to 350*.  Spray a muffin tin with nonstick spray.
  2. In a medium bowl, sift the flour, cornmeal, turbinado sugar, baking soda and salt together. Make a well in the center.
  3. In another medium bowl, whisk the agave nectar, buttermilk and eggs together.  Pour into well and stir with a wooden spoon just until combined.
  4. Spoon the batter evenly into 8 of the muffin cups.  Bake until the tops spring back when pressed lightly, about 18 minutes.  Cool for 2 minutes, run a knife around the inside of the cups to release the muffins and remove them from cups.
Now I'm off to finish straightening up our house, put away Christmas and get ready for work tomorrow. Blech.  I can't believe I have to work tomorrow!  I really can't complain because I've had most of the last two weeks off, but its difficult to get motivated to go in for just one day before the weekend...   I hope you all have a lovely evening!

ringing in the new year

Happy New Year!!!  I hope that everybody had a safe and enjoyable evening filled with excitement and hope for what 2009 has to bring! 081231-d1 The hubb and I had big plans to attend a New Years Eve / Surprise Birthday Party for a good friend of ours.  We got back into town mid-afternoon, unloaded the car and made a trip to the grocery store to stock up on food and an appetizer to take to the party.  We timed everything perfectly so that we would finish our errands and get home with enough time to shower and get ready for the celebration. I'd even picked out exactly what I wanted to wear in my mind as we drove home from the store.  When we got home, we had a big surprise waiting for us... Our dogs had eaten 22oz of Lindt Dark Chocolate Truffles, and about 1/2 of the wrappers. Needless to say, we panicked.  I immediately got on the internet for advice while the hubb called our 24 hour emergency vet.  With the help of the vet and my research on the 'net, we determined that each dog would have to consume 20+ ounces of dark chocolate in order for it to be toxic for them.  The problem was, we had no idea if one or both of them had consumed the goodies and how much each of them had eaten.   081231-dogs So, instead of attending a fabulous party with wonderful friends, we got to stay home and force each of our dogs to vomit in order to remove as much of the chocolate from their systems as possible.  Not exactly how we had planned to say goodbye to 2008, but considering some of the challenges we faced in the year it was almost fitting... Because we hadn't planned on this turn of events we weren't prepared to fix dinner.  So instead I ordered us some Chinese food.  I didn't even worry about how healthy it was...after our evening, and considering that the next day was a whole new year to eat healthfully in, I ordered whatever sounded good on the menu.  Szechuan String Beans, Veggie Lo Mein, Hunan Veggies and Tofu and Cheese Wontons. 081231-d2 Luckily we had picked up some champagne while at the grocery store so we were still able to ring in 2009 with a little bit of bubbly.  And, the dogs are feeling much perkier this morning and seem to be over their chocolate feast.  Happy New Year to us.  :) So what's in store for 2009??? Driving 14 hours from Florida to Virginia the last two days left me with a lot of time to think about 2008 and all that came with it.  There were certainly challenges...
  • Running injuries that kept me from completing the 2008 Charlottesville 10-Miler
  • Double knee surgeries and a 5 month recovery for our dog, Lucy
  • Our vehicle transmission dying at the most inopportune time
But with those challenges came opportunities for new beginnings...
  • My inability to complete last year's race led to my decision to train again this year and start this blog to track my progress
  • Lucy is now mostly recovered and the hubb and I feel that her surgery has had many positive effects on us.  We feel that we are now better dog owners, have gained better perspective on our finances and were given the opportunity to really examine our priorities during a time when money was tight and free time was limited.
  • There was no saving our previous vehicle so we purchased a 2008 Honda Fit and are so excited to see the improvement in gas mileage from our old Mazda Tribute SUV.  We're helping to save the planet!  (and our wallets!)
There were also many exciting events and accomplishments... The hubb and I returned to New Orleans and the restaurant where we were married. 2008-1 I celebrated my 26th birthday with some wonderful girlfriends. 2008-3 I finished my graduate thesis, Housing for Seniors in Post-Katrina New Orleans. 2008-4 And was rewarded with a Master's Degree in Architecture, along with some amazing and unexpected awards. 2008-5 I managed to find a job I really like in a hurting economy, many of my friends weren't so lucky. The hubb and I picked up a new summer hobby, kayaking!  I can't wait to get back out on the water... 2008-7 And welcomed the second year in our garden and the beautiful harvests that came with it. 2008-9 We discovered a new vacation spot that we'll be returning to often, I hope. (lostrivermodern) 2008-12 And voted for a new president. 2008-11 And of course, on November 1st, 2008 I started Bella Eats!   bella-eats-header-small-right All-in-all, 2008 was a good year filled with simple pleasures, opportunities for self-reflection and lots of time with family and friends.  I'm looking forward to 2009 and have laid out some goals for myself this year.   I have professional goals:
  • Finish logging all of my internship hours so that I can continue working towards my license in Architecture
  • Sit for the LEED professionals exam (I'd be certified in green building technology, basically)
And physical wellness goals:
  • Complete the Charlottesville 10-Miler on April 5th, 2009
  • Commit to running 4-5 days/week, strength training 3 days/week
  • Find my ideal weight by May 1st, 2009 and maintain my healthy lifestyle through and beyond 2009
And mental wellness goals:
  • Read more
  • Bake more (baking is a huge stress relief for me...I love it!)
  • Spend less time behind the computer
And married life goals for the hubb and I:
  • More date nights
  • Save more, spend less
  • Better household chore routines so our weekends aren't consumed with cleaning and errands
On this first day of 2009 I am excited for a new beginning, hopeful that change is coming and thankful for the memories I have of 2008.  Happy New Year!!!

end of the holidays...

...and back to reality.   The hubb and I head back to Virginia tomorrow (sniff sniff) and enjoyed the last of our meals with my family today.  The food and company have been fabulous, but I think we're going to need a week of detox to recover from all of the decadent foods we've been consuming!  Today wasn't too bad, but I did manage to fit 3 pieces of Pumpkin Ooey Gooey Butter Cake in. Here's today's eats... Breakfast:  Another fabulous smoothie, this one heavy on the pineapple, and a piece of the pumpkin ooey gooey butter cake. 081229-b1 081229-b2 Lunch:  My momma and I went to Olive Garden while our hubbs were out fishing.  Olive Garden is a tradition for us...we loaded up on the all you can eat salad, soup and breadsticks, my fave!  We also had calamari to start.  It was a fantastic lunch!  :) Snack:  Another piece of pumpkin ooey gooey butter cake (unbelievable, I know). Exercise:  I went for a run this evening!  It was so much more pleasant at 5pm than at 9am...we had a great breeze coming off the ocean and the sun was set behind the trees and houses.  I only did about 2-1/2 miles running with some walking warm-up and cool-down.  I'm REALLY proud of myself...I ran 4 times while on vacation and am planning a run tomorrow morning before we get on the road. Last year at Christmas, even though I was training for the 10-miler then too, I only managed to run once on our week-long vacation.  Yay for progress!!!  :) Dinner:  The hubb and I brought my stepfather sausages from our favorite farmer in Virginia, Babes in the Wood.  We grilled them up and had leftover Indian potatoes and cauliflower, cranberries, and a huge salad. 081229-d2 081229-d1 I had 1/2 a hot italian link and 1/2 a bratwurst link.  We also had some homemade nectarine preserves on top of the sausage after I took this picture, which was very tasty.  My stepfather gave me a jar to take home to Virginia so you'll be seeing it prominently featured I'm sure... 081229-d3 Dessert:  Another piece of pumpkin ooey gooey butter cake (they are tiny pieces, but this is really getting embarassing...). After dinner my stepfather taught me how to can preserves!!!  I'm so excited, I want to be able to can this summer when we get our garden going again.  Tonight we made the cranberry "ketchup"  I made last week (email me if you want the recipe) so that he could teach me his methods. cran-11 cran-2 cran-3 cran-4 So I'll be on the road a good part of tomorrow and Wednesday.  We've decided to get a hotel on the way back to break up the trip a bit (yay!) so depending on internet availability I may or may not have a Tuesday evening post.  Rest assured, the eats won't be all that interesting as we hit Subway on our way up the east coast...  :)  I am going to be thinking about some resolutions during the long car ride so stay tuned for some breathtaking, soul-defining thoughts when I'm back in VA......kidding.  :)  What are you all thinking about for New Year's Resolutions?

another holiday feast...

My family had another feast today.  Its what we do...we feast.  Actually, we normally only officially feast twice over the holidays, but this year we were lucky enough to fit in three family feasts.  I think this is the last of 2008, although we still have a few days left in the year so we may try to slip another in...!  Before I get to this afternoon's amazing eats let me recap the day... Breakfast:  7 Fruit Smoothie a la my stepfather.  It was really tasty, and I can't even remember the fruits he told me he put in it... 081228-b1 The hubb and I went for a run after our smoothies.  We were a little late getting out the door this morning and it was a bit warmer, a bit more humid and a LOT sunnier!  I forgot how big the sky is in Florida and how brightly the sun shines.  In Charlottesville we have narrow, hilly streets and tall trees that pretty much block the sun on our morning and evening runs.  This morning we were squinting the whole time, our route was straight, flat and boring...it just wasn't fun.  We were supposed to run 4 miles for the training program and we only did about 3 miles total, with some walking in the middle.  I've decided that as nice as it is to not have to bundle up for my Florida runs I do miss the hills, variety and shade of Virginia... Lunch:  A hodge-podge of green bean casserole, sliced turkey, cranberries, carrots and citrus.  It was just what I needed to hold me over until our 3pm feast. 081228-l2 I also munched on a few crackers with Asiago Cheese spread while my lunch was heating...it was really tasty. 081228-l1 Afternoon Feast #3:  We had a variety of wonderful foods... Fried Squash Cakes - These are a family favorite that my grandfather makes...they are to-die-for.  I don't know how to make them and I'm not going to ask because I don't want to know.  I'd make them ALL the time... 081228-d5 081228-d7 Steaks, for those who like that kind of thing...(not me!!!). 081228-d2 Ribs, for those who like that kind of thing...(me me me!!!). 081228-d6 A huge salad (yay!!!). 081228-d1 Roasted Veggies (double yay!!!). 081228-d4 We also had a yummy Indian dish with potatoes and cauliflower...I can't remember its proper name but it was so good.  Here's my plate with two ribs, a pile of salad, potatoes + cauliflower, roasted veggies and a few squash cakes.  Also, a glass of vino.  Sadly I did not get a picture of the fabulous chianti we had after I finished this glass, so so so good. 081228-d8 And my trio of desserts...Coconut Mango White Chocolate Bread Pudding with Rum Sauce, Pumpkin Ooey Gooey Butter Cake [recipe to come - but from Paula Deen] and the blurry glob in the front is Chocolate Mousse [recipe to come]. 081228-d Oh, and my cousin's birthday is coming up so of course we had cake... 081228-d10 Aaaahhhhh....I will definitely be running tomorrow. Finally, here is the hubb, the "kids" and I in our annual holiday photo in front of my momma's house...I just can't resist 'cause the kids are so cute!!!  :) 081228-us Alrighty, time for bed.  I can't wait to catch up with all of your blogs!  I've been so absent, my google reader is getting more and more full...scary!  Thanks for continuing to read mine and for putting up with my inconsistent posting this last week!  :)

coconut mango white chocolate bread pudding

I've mentioned that my family is very attached to the city of New Orleans and all that comes with it...food, music, architecture, people and culture.  One of our favorite food traditions when we visit is to stop in the Palace Cafe for their famous  White Chocolate Bread Pudding.  After one visit my stepfather decided to create his own version of one of our NOLA favorites.  We had it this year (and most years) for Christmas Day dessert. bread-6 Coconut Mango White Chocolate Bread Pudding Ingredients:
  • 2 tbsp melted butter
  • 4 large eggs
  • 3 cups unsweetened coconut milk
  • 1/2 cup packed brown sugar
  • 1/2 cup rum
  • 1 tsp vanilla
  • 1 tsp ginger
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1-1/2 cups diced mango
  • 1/2 cup shredded coconut
  • 4 oz white chocolate
  • 6 cups cubed day-old crustless bread
Steps:
  1. Melt white chocolate in coconut milk on stovetop over medium-low heat.  Set aside and allow to cool slightly.
  2. Whisk eggs and add to white chocolate mixture. (you want the white chocolate mixture to be cool enough so as not to scramble the eggs...)  Add all spices and whisk together.
  3. In large buttered baking dish combine the cubed bread, mango sliced and coconut.  Pour the chocolate mixture over the bread mixture and let soak for 30 minutes.
  4. Bake at 350* for one hour.  Serve with rum sauce.
Rum Sauce Ingredients:
  • 2 cups heavy cream
  • 1/2 cup rum
  • 1/3 cup sugar
  • 1/4 cup cornstarch
Steps:
  1. Combine run, sugar and 1-1/2 cups of cream in medium saucepan.  Bring to a simmer and remove from the heat.
  2. Dissolve the cornstarch in the remaining 1/2 cup of cream.  Add to the rum mixture.
  3. Return to heat and simmer for 4 minutes.
bread-1 You will probably need two medium-sized loaves of bread...Italian is what we typically use.  If you remove the bread from its packaging and sit out over night it will be sufficiently stale the next morning.  Remove all crust and cut into 1" cubes. bread-2 bread-3 The recipe is really quite simple  and the combination of flavors is absolutely perfect.  I actually made this for my co-workers for breakfast once and they were very, very happy... bread-4 bread-5 I hope that some of you will try it and let me know what you think!

Hello bloggies!  I'm going to try and catch up on some recipe posts from my first few days in Florida.  It was such a whirlwind around here with the holidays that it was all I could do to keep up with food journal posts (and I didn't do that great of a job at that!).  So, stay tuned for a flurry of posts over the next 48 hours, I'm hoping to be all caught up before we leave for Virginia Tuesday morning.  I promise to keep the writing as short as possible so that you can easily skim... Our first night in town we had my stepfather's meatloaf and my momma's mac & cheese...a perfect combination if you ask me.   meatloaf-2 Joe's Meatloaf (a fabulous, healthier version of a classic favorite...) makes 6-8 servings Ingredients:
  • 1 lb ground pork
  • 1 lb ground turkey
  • 1 onion, chopped
  • 1 red bell pepper, chopped
  • 1 celery stalk, chopped
  • 2 carrots, chopped
  • 1/4 cup parmesan cheese, shredded
  • 1/4 cup Italian bread crumbs
  • 2 eggs
  • splash of worcestershire sauce
  • splash of hot sauce
  • squeeze of tomato paste
  • Provencal herb mix (thyme, oregano, parsley) to taste
  • 1 tbsp roasted garlic, minced
  • salt + pepper to taste
Steps:
  1. Blend all ingredients together in mixer.
  2. Form into loaf in large baking dish.
  3. Bake at 350* for 1 hour 15 minutes.
meatloaf-1 Momma's Mac & Cheese (I did a slightly healthier version here) Ingredients:
  • 1 lb macaroni noodles
  • 2 bags of shredded cheese (about 4 cups) - I like cheddar and monterrey jack or mozzarella
  • 2 eggs
  • 1 cup milk
  • extra milk
  • salt + pepper
  • 3 tbsp butter, cut into pieces
Steps:
  1. Spray a casserole dish with cooking spray.
  2. Boil macaroni noodles until al dente.
  3. Spread about 1/3 of the macaroni noodles in the bottom of the baking dish.
  4. Sprinkle about 1/3 of the cheese over the noodles and sprinkle with salt + pepper.
  5. Repeat until you have 3 layers, ending with the last of the cheese.
  6. Whisk together the 2 eggs and 1 cup of milk. Pour over the top of the casserole dish.  Add enough milk until it reaches 1/2 way up the side of the casserole dish. (its easier to tell if you use a clear glass dish, but you can wiggle an opaque dish back an forth to see where the milk level is).
  7. Spread the pats of butter across the top of the casserole.
  8. Bake at 350* for 1 hour.

I had an amazing dining experience tonight.  The hubb, my momma, stepdad and I went to a fantastic Japanese restaurant and split the Boat for Four, which included 4 different rolls, 28 pieces of sushi and 28 pieces of sashimi.  We also got a volcano roll on the side, because...you know...the entire boat of sushi just didn't seem like enough... We have been going non-stop ever since we left Charlottesville early Tuesday morning!  Its been great to catch up with friends and family, and I think we'll have a couple of days to relax now before heading back north.  I saw on the weather this morning that Charlottesville has reached 60*, so I'm happy that we'll be heading home to a little warmth and won't have too big of a shock when we leave this lovely Florida weather! Yesterday the hubb and I went to my hometown to visit with my Daddy and stepfamily.  I always love to catch up with them because they are so full of energy and good cheer.  Definitely a busy household!  But first, we again took advantage of the Florida warmth and went for a run in the morning.  Just a couple of miles because we've had some time off, but it was still great to get out on the road and stretch our legs.  Breakfast:  Bananas Foster Oatmeal.  Soooooooooooo good.  Another flavor of New Orleans that is a favorite.  My stepfather sauteed bananas in butter and brown sugar then poured them over our rolled oats flavored with vanilla extract.  On the side I had some sliced citrus. 081226-b1 081226-b2 Lunch:  My daddy took us to my favorite Mexican / Cuban restaurant, El Leoncito.  I had 1/2 of a Cuban sandwich with black beans and sweet plantains on the side, along with a margarita on the rocks.  I've missed that combo! Snack:  A latte from my daddy's new espresso machine...fancy! 081226-s1 We also shared a couple of great glasses of wine while waiting for the sun to set so that we could check out my dad's fabulous Christmas lights display.  I have to brag...my dad's lights are the best I've ever seen.  He wins the neighborhood contest every year that he is eligible (only every other year).  These pictures don't even do them justice, but they'll give you an idea.  He had hundreds of visitors on Christmas Eve walking through his yard to see all of the details... 081226-lights-2 081226-lights-3 081226-lights-4 081226-lights After seeing the lights we went over to my step-grandparents' house for some chili and Christmas carol singing.  Sadly, all of the pictures were taken on my stepsisters' and dad's cameras so I have none to post right now.  :( Today my Momma and I had a spa day!  We got up early for some breakfast... Breakfast:  Egg white omelet with sauteed veggies and a biscuit with homemade tangerine preserves.  I was craving veggies since I hadn't had any in a couple of days... 081227-b1 Then we went to Essentials Day Spa for massages, facials, manicures, pedicures and a shampoo/style.  It was so lovely!!!  They served us lunch and wine...I had a mixed greens salad (more veggies!!!) with feta, tomatoes and walnuts and two (yes two!) glasses of chardonnay.  Let me just say...I feel amazing! Snack:  I broke into the Coconut Mango White Chocolate Bread Pudding [recipe to come]...hey, I'm on vacation, right?!?  Argh...I'm going to gain 10 pounds on this trip, I just know it.  Luckily its been a relatively light day and we're going for sushi tonight...  :) 081227-s1 Alright lovelies, I'm hoping to have some recipe posts up tonight and tomorrow.  Its so hard to get behind the computer when you're around family!  Have a fabulous weekend!  :)

...beautiful 75* Florida weather and a boat ramp right across the street from my parents house... 7 ...the "kids" getting a chance to swim at the end of December... 6 ...a Christmas Feast on my parents' back patio because the weather was so lovely... 10 ...which included a very tasty Honeybaked Ham... 9 ...and roasted cauliflower and onions dusted with smoked paprika (along with green bean casserole, mashed potatoes and cranberries)... 8 ...a feast that concluded with one of my all-time favorite desserts, Coconut Mango White Chocolate Bread Pudding with Rum Sauce [recipe to come]... 111 ...along with the most amazing chocolate mousse I've ever experienced [recipe to come]... 12 ...and most of all, an afternoon spent with some of my favorite people.  :) Merry Christmas Everyone!!!  Tomorrow the hubb and I are driving 45 minutes north to hang out with my dad and stepfamily...I'm really looking forward to seeing them!  And Saturday we'll be back at my mom's so that she and I can enjoy one of my Christmas gifts...a day at the spa!  :)

Merry Christmas Everybody!!!  I hope you all are having a wonderful holiday with family and friends, full of good cheer, good food and good company!  :) I've been debating how to handle my posts these next couple of days because there is going to be so much good food consumption happening.  My stepfather is an AMAZING cook and we always have so much fun eating the fantastic meals he prepares.  My mom, my hubb and I help too... :)  So I think what I will do is post my food journal entries with meal images, but then do some extra separate posts for specific recipes that deserve their own space.  The recipe posts will be sporadic and will trickle in over the next week. Let me start with our Christmas Eve...  I got up and went for a run!!!  Yay...it had been nearly a week.  Yikes.  I've got lots of mileage to make up and I plan on taking full advantage of the lovely warm weather we are having. Breakfast:  The hubb and I met my best friend / college roommate and her fiance for breakfast at a restaurant on Cocoa Beach called The Omelet Station.  I had pancakes and a fruit salad on the side...the food was ok, but the highlight of the meal was definitely catching up with my best bud.  Sadly, I got NO PICTURES!  I don't even care about the food pictures, I didn't get any pictures of me and Jackie!!!  So so so sad.  She's off in Jamaica now, lucky girl, so I totally missed my opportunity.  :( Lunch:  My momma put together a salad for us, it was just what I needed!  It had ham, pickles, green olives, a little cheese and balsamic dressing. 081224-l1 Dinner:  We were with my stepfamily in Daytona for their Christmas Eve tradition.  This was the first time that the hubb and I participated because we typically spend Christmas Eve with my dad and other stepfamily (the hubb and I have 4 families total...).  There were all kinds of goodies coming out of the kitchen that I munched on throughout the evening.  We don't have a set meal, people just graze...its lovely.  :)  Here's a small sampling, I wasn't on top of the food pictures for the evening: antipasti tray 1 crescent roll wrapped sausage 2 homemade chicken tenders (unbelievably good...I had several!) 3 cream puffs (also amazing...) 4 And the family in front of hiding my grandmother's Christmas tree! 51 It was a lovely evening, and we were exhausted by the time we got home.  I wrapped up a few last presents and then crashed! Christmas morning was supposed to start with another run, but I just could not drag my bootie out of bed and when I thought I hit snooze I actually turned my alarm off.  :(  Oh well.  We'll go later...or tomorrow... Breakfast:  The tradition in our family is to have panettone french toast [recipe to come]. I'm sure you've all seen the boxed panettone loaves in the supermarkets, they've become very popular.  When we first started making our Christmas breakfast my stepfather had to search the state to find a loaf, and now they are everywhere!  I guess we're trendsetters...  :) Panettone is a fluffy Italian bread that contains candied orange, citron and lemon zest. 11 I think this may be my all-time favorite breakfast.  I look forward to it every year.  We spent last Christmas with the hubb's family and we had to introduce them to the tradition because there was just no way I could go a year without it.  I realize I could make it on other days around the Christmas holidays, but its just not the same for me if I don't have it Christmas morning!  This morning I also had two slices of bacon and some orange and tangerine slices. After breakfast we opened presents!  So much fun to be with my hubb, momma, stepfather, stepbrother and sister-in-law.  I received some wonderful, thoughtful gifts, but I think my favorite is my new KitchenAid Mixer!!!!!!!!!!!!!  My current KitchenAid is a 28-year old hand-me-down from my Momma.  Its almond-colored...oh yeah.  It only has 3 of its original 10 speeds and puts off an interesting electrical smell whenever I use it.  It almost died while I was making marshmallows last week and I was nearly in tears.  So, needless to say, I am SOOOOOO EXCITED!!! 21 My hubb gave me some fantastic new bread baking tools that I opened while we were still in Virginia so I don't have any pictures to share now, but I will because they will go so well with the new mixer! Lunch:  Our second Christmas food tradition (we have lots of food traditions...I told you, my family is ultra food-oriented!) is to make Chicken and Andouille Sausage Gumbo [recipe to come].  My family has a very strong love for New Orleans (the hubb and I even got married there!), which I will write more about when I post the recipe for the gumbo. 41 Christmas food (or drink) tradition #3 is MOJITOS!!!!  My family does live in Florida, and when you have 80* Christmas' mojitos are completely appropriate.  Trust me.  :) 31 5 There are so many wonderful smells coming from the kitchen right now...we are going to have a fabulous afternoon meal here in a couple of hours that I will post later tonight.  For now, I'm going to fulfill Christmas tradition #4, which is the afternoon nap!  :)

  Happy Christmas Eve everyone!!!  The hubb and I made it safely to Florida late last night after a grueling 14-1/2 hour drive...blech.  We’re happy to be home with family and are getting ready to head out to some Christmas Eve festivities, so this will be a quick recap post. Thank you all for the lovely compliments about our holiday gift boxes!  They were such fun to make, and relatively easy! I have to post this adorable picture of Hank...he just has to keep his head between our seats so that he feels like he's in the front with us.  Such a cutie! 081223-hank Eats recap... holiday gift boxes

Hello bloggies!  Thank you for all of the lovely comments about my cranberry apple holiday pie...it was a big hit at the office holiday party last night!  This was my first time using all butter in the crust instead of a combination of butter and lard (I just can't bring myself to buy a tub of lard anymore, even if it does produce a heavenly crust!!!).  It tasted great, but the bottom of the pie was really hard to cut.  Any ideas why?  Would it be the difference in using just butter and no lard?  Maybe I should have bought a veggie oil shortening to substitute instead... Any suggestions you have are much appreciated!  :)  I read a great article in the NY Times Dining & Wine section about the importance of butter in baking, if anybody is interested the article is here.  I'm dying to try this recipe that they provided too! We had an awesome dinner over at my boss' house last night.  Salmon, green beans, risotto and a beautiful salad.  I don't have any pictures as it was a small gathering and neither my boss nor co-worker know about the blog.  That's going to be a theme in this post, I've been running around like a crazy woman and haven't had time for meal pictures.  Don't worry though, I'll make up for it with holiday treat photos!  :)  Other than dinner last night and a lovely breakfast at our friend Amy's house this morning you wouldn't be interested in my eats these last couple of days anyway, especially since my breakfast yesterday consisted of marshmallows, hot cocoa, and more marshmallows!  :) The hubb and I were really busy yesterday making boxes for our friends and co-workers.  I decided a week or so ago that I wanted to do something really simple for everybody, so picked out a couple of recipes from Good Things Catered and  A Kitchen Story.  These two ladies have some awesome recipes to share, so be sure to check out their blogs!  Of course, the gift boxes wound up being far from simple but we had a great time working on them together. We started with marshmallows Saturday night.  Katie's recipe is perfect, I didn't change a thing.  A note of warning if you want to double the recipe (which I did), still make the recipe in individual batches.  One batch will completely fill your mixing bowl by the time it is done, so you'd never have enough room for two. m7 marsh-3 Make sure to be quick with getting the marshmallow goo from your mixer to the pan and smoothing it out, it starts to harden pretty quickly.  After we had our batches settled in their pans (we made 2, one vanilla flavored and the other peppermint), we let them sit overnight to set.  In the morning, I released the marshmallow from the pan to cut it into little 'mallows. m1 I tried several different methods of cutting, and didn't have any knives that worked for me.  The hubb suggested that I use my stainless steel scraper, and it was perfect.  The key is to push the blade straight down through the marshmallow, don't pull it through like you would cut a cake.  The 'mallow is just too sticky and it deforms if you try to pull a cutting utensil through. m6 They turned out beautifully, and are so amazingly good.  You've never had a marshmallow if you've only had the store-bought variety...these are 100 times better. m2 m4 m5 After cutting the marshmallows (and eating quite a few!) we moved on to dark chocolate bark with cherries and walnuts.  Four batches of bark.  I've never made bark before so I followed Kristin's recipe exactly, the only thing I changed was my method of melting the chocolate.  We used a double boiler on the stove top rather than the microwave. b1 The chopped cherries, walnuts and crystalized ginger were perfect compliments to the dark chocolate. b2 The chocolate-y goodness spread out nicely on the sheet pan, but at this point I was still skeptical of how the bark would turn out.  I was worried that when we cut it into individual pieces it would shatter into much smaller pieces than I was hoping for. b33 But it came out perfectly.  I was shocked at how easy it was to cut and how nicely it sliced into small pieces.  And the flavors are amazing together, not too sweet. b4 We also made hot cocoa with Katie's recipe, although I was in such a rush at that point that I wasn't taking any pictures.  Nothing too exciting though...other than the vanilla sugar.  It turns out vanilla sugar is pretty hard to find in Charlottesville, especially in the quantity that I needed (16 cups, I made 4 batches of cocoa).  And the small amounts you can find are expensive, I found out why when I bought vanilla beans to make my own vanilla sugar.  The beans are $5 each!!!  I bought 4, and then read after the fact that Katie recommends 1 bean per 2 cups of sugar, so I actually needed 8.  That coupled with the fact that you really need 1-2 weeks for the vanilla flavor to seep into the sugar and I only had 6 days before needing to make my cocoa means that my hot cocoa mix isn't nearly as vanilla-y as it should be. I'll definitely be trying this recipe again next year and will follow it properly because I think it has the potential to be amazing. We packed all of our goodies up in recyclable packaging - brown paper boxes, shredded paper grocery bags and paper ribbon.  I had to use cellophane baggies for the marshmallows and bark because I couldn't think of anything else that would be as pretty... box-3 box1 box2 box4 box51 This was so fun.  I love doing projects like this with my hubb.  It probably took us two full days with all of the candy making, shopping for ingredients + materials and assembly of the boxes, but it was so worth it.  We've had great reactions from our friends and had such a great time putting the gifts together! Ok lovelies, I'm off to another holiday party tonight, this one is for the hubb's office.  And tomorrow morning, at a VERY EARLY 5am, we are loading the car up with luggage, presents and dogs for our 13 hour drive to FLORIDA!!!  YAY!   Have a fabulous evening...  :)

cranberry apple holiday pie

Hello my lovelies!  Today has been a whirlwind, and my eats are definitely not worth even mentioning as they were all eaten in a rush between making much more interesting things in the kitchen.  I'm rushing off to a holiday party tonight at my boss's house, for which I am bringing one of my favorite pie recipes.  I thought I would share it with you this evening, and hope to post the other fun holiday treats that the hubb and I made today, tomorrow.  Have a lovely evening! Cranberry Apple Holiday Pie This is the first pie recipe I ever made on my own.  I started with a recipe I found in an old cookbook of mine that I don't even have anymore, but have modified it over the years.  Its the perfect holiday pie and always a big hit. 081220-pie-5 081220-pie-6 081220-pie-8   Cranberry Apple Pie Ingredients for the filling:
  • zest of one orange
  • 3 tbsp fresh orange juice
  • 2 large, tart apples
  • 1 cup of cranberries
  • 1/2 cup golden raisins
  • 1 cup turbinado sugar
  • 1/2 cup dark brown sugar
  • 2 tbsp quick-cooking tapioca
for the crust:
  • 2 cups all-purpose flour
  • 1/2 tsp salt
  • 10 tbsp butter, cut in pieces
  • 1 egg mixed with 1 tbsp water for egg wash
  • turbinado sugar for sprinkling
Steps
  1. For the pastry, sift the flour and salt into a bowl.  Add the butter and cut-in with a pastry blender or rub in with your fingers until the mixture resembles coarse bread crumbs.
  2. With a fork, stir in just enough iced water to bind the dough.
  3. Gather into two equal balls, wrap in parchment paper and refrigerate for at least 20 minutes.
  4. Preheat oven to 400*F.
  5. Combine orange zest and juice in a medium-sized bowl.  Peel and core the apples and add them to the orange mixture.  Stir in the cranberries, raisins, sugar and tapioca.
  6. On a lightly floured surface, roll out one ball of dough about 1/8 inch thick.  Transfer to a 9 inch pie tin and trim the edge.  Spoon the cranberry apple mixture into the shell.
  7. Roll out the remaining ball of dough to a circle about 11 inches in diameter.  With a serrated pastry wheel, cut the dough into 10 strips 3/4” wide.  Lay five of the strips across the pie in one direction, and lace the other five strips perpendicularly to the first five.
  8. Brush the top of the dough strips with the egg wash and sprinkle with turbinado sugar.
  9. Bake for 45 minutes until the crust is golden and the filling is bubbling.

Happy Saturday bloggies!  I hope you've all had a wonderful first 1/2 of your weekend...mine was super-productive.  Sadly, the productivity did not include my training run.  :(  I've been bummed about it all day.  The hubb and I had the alarm set to go, but my honey was feeling under the weather so we postponed our long run 'till tomorrow.  I'm crossing my fingers that the ice they are predicting tonight will not happen so we won't be deterred again, especially since the hubb is feeling much better tonight.  :) Breakfast:  Instead of going for a run I made an indulgent breakfast, Eggnog French Toast with cranberry "ketchup".  Yummy!  No butter or syrup, just cran ketchup and a sprinkle of powdered sugar. 081120-b1 This was easy, I just combined:
  • 2 eggs
  • 1/3 cup eggnog
  • 1/4 tsp cinnamon
  • 1/4 tsp vanilla
Whisk it all together, soak your bread in the mixture (I used whole wheat), and brown in a nonstick skillet until both sides are golden. For those of you that would like the cranberry "ketchup" recipe, leave me a comment on this post *letting me know specifically that you want it* and I'll email it to you.  Its SO GOOD!  You all will love it.  Erin let me know that the recipe is straight from a cookbook so we can't publish it because of copyright issues. After breakfast I rushed off to a morning hair appointment then ran crazy errands all day.  I think I visited nearly every single store in Charlottesville.  The traffic and crowds were insane!!!  I'm glad to have accomplished everything on my list today though so that I don't have to go back out in the madness tomorrow... Morning Snack:  I grabbed this while standing in a check-out lane at Target.  See what happens when you forget to pack your snacks...you wind up with overly-indulgent Chocolate Drizzled goodness.  Its actually a tiny, one-portion bag...and I ate the whole thing. 081220-s2 Next time I'll remember my larabar... Lunch:  I never expected my errands today to take 6+ hours, so come 2:30 I was STARVING!  I stopped in my favorite gourmet specialty food store, Feast!, and grabbed a prepared sandwich.  No picture, I inhaled it far too quickly.  It consisted of local chevre, artichokes, arugula, sundried tomatoes and olive tapenade on a baguette.  I assure you, it was tasty. Afternoon Snack:  When I FINALLY got home I grabbed a yogurt out of the fridge...I'm still in clean-out mode and want to finish all perishables before we leave town on Tuesday.  I'm so very spoiled after discovering greek yogurt...this regular was way runnier than I like. 081220-s1 Dinner:  We needed something quick and easy.  The hubb ordered a pepperoni, onion and black olive pizza, of which I had two pieces minus the pepperoni and the crust.  I also made a leftovers salad with napa cabbage, broccoli slaw, celery, hearts of palm, alfalfa sprouts, dried cranberries and light ranch dressing. 081220-d1 And a glass of cabernet. 081220-d2 Oh!  While I was out and about today I found a few exciting things... 081220-larabars1 FINALLY!  The holiday-flavor Clif Bars, PEANUT BUTTER COOKIE Larabars, and a Cashew Cookie Larabar!!!  Yay!  Now I feel like I'm part of the club!  :) The hubb and I have been busy this evening with Christmas prep as is typical these days.  Here's one of our activities...Homemade Marshmallows!  They are going in gift boxes for friends and family.  I'll post more about them tomorrow when they are finished. marsh-1 Have a fabulous Sunday!

Last night as I was setting my alarm before bed I told the hubb I'd be getting up early to practice some yoga.  He laughed and told me that no, it was far more likely that when my alarm sounded he'd roll over to cuddle me and convince me to turn it off.  Well, he was right.  No yoga for me this morning...but it sure felt good to sleep in a little!  I hit snooze every 10 minutes for a full hour.  Do any of you do that?  I like to wake up slowly so I always set my alarm for 20-30 minutes earlier than I actually need to get up so that I can hit snooze a couple of times.  Is that strange? I've done it since high school.  Its gotten worse now because I will literally hit snooze for a full hour (like I did this morning).  Each time it goes off I wake up a little bit more.  I'm just not a jump right out of bed when the alarm sounds kinda girl... Anyway, I made up for my lack of yoga this morning with 50 minutes of yoga this evening.   It felt great, and now I feel good and stretched out for my 3-1/2 mile training run tomorrow morning!  :) Today's eats: Breakfast:  Ezekiel Cinnamon Raisin muffin with 1-1/2 tbsp almond butter, sliced apple and cranberry ketchup!  Oh my...this was delicious!  I love the Ezekiel Muffin/nut butter/fruit combo...it keeps me so satisfied! 081219-b1 081219-b2 Several of you have asked for the cranberry ketchup recipe, which I got from Erin at Care To Eat. I've asked her permission to post, so if she says yes I will hopefully have it up tomorrow!  If you can't wait though, just send her an email and I'm sure she'll give it to you, she's a sweetie! Morning Snack:  I didn't need a snack because my super-hearty breakfast kept me happy through the morning.  But when my hubb brought me a donut from his office, I just couldn't resist!  Actually, it was a spudnut...even better.  Have you ever heard of a Spudnuts?  I hadn't before moving to Charlottesville. Apparently Spudnuts used to be all over the country but I thought that ours was the last in existence, until finding the above website that states there are still 35 locations spread across the USA. Here's ours... spuddies (image from here) A spudnut is a donut made with potato flour, and they are heavenly.  Better than a Krispy Kreme any day of the week...  I chose a glazed spudnut with shredded coconut on top.  YUM.  It had been so long that  I forgot how good they are.  Indulgent.  :) Lunch:  Whole wheat pita stuffed with TJ's edamame hummus, alfalfa sprouts, broccoli slaw and red bell pepper, along with TJ's split pea soup.  I didn't eat the second 1/2 of my pita...perhaps because I was full of spudnut?!?!?  The TJ's split pea soup was pretty good.  I honestly have nothing to compare it too....I'm pretty sure this was my first split pea soup experience ever! Surprising for a girl who loves her soup... 081219-l1 Snack:  I'm in fridge/freezer/pantry clean-out mode, and it was driving me crazy this morning that I had just a little Kashi H2H left in the pantry but didn't want cereal for breakfast.  So, I added it to the trail mix that the hubb made me last week and brought the tub to the office to live. 081219-s1 It contains: Kashi H2H, mixed nuts, dried cherries, pineapple and pears, and crystalized ginger.  I had about 1/2 a cup of the small stuff and one dried pear. Dinner:  Veggie Bean Chili a la my hubb...he's the best!  We had it over brown rice pasta, with a little sprinkling of cheddar on top.  I also had a glass of Meridian Cabernet...this is one of our favorite wines for every day. 081219-d1 081219-d2 Well, I officially have 3 full days left before leaving for Florida Tuesday morning!!!  Soooooo excited, but this weekend is going to be ridiculously busy so my posting may be minimal...  Here are a few To Do's:
  • training run (3-1/2 miles!)
  • haircut
  • finish knitting
  • finish last minute shopping
  • make christmas gift boxes for c'ville friends (bark, marshmallows and hot cocoa mix)
  • finish wrapping presents
  • laundry and packing
  • yoga sunday afternoon
  • make dessert for company party
  • my company party sunday night
  • the hubb's company party monday night (hence all the packing happening this weekend)
I know you're all really busy too and I hope that you all accomplish the enormous lists that you've made yourselves!!!  What's on your agenda this weekend? slower than slow?

Hello bloggies!  Yay for tomorrow being Friday!  :) Questions for you all: Are you having trouble with my blog being slow to upload?  If it is too slow and annoying, I was thinking of having my blog only show the first bit of each post on the front page, which means you'd have to click "continue reading" at the bottom of the post to see the whole thing. Would that be annoying for you?  I want to make sure you all are happy and excited to read so any feedback you can give is greatly appreciated! This morning the hubb and I got up for another lovely morning run.  I just love getting up and running in the morning, especially since it has been slightly warmer lately.  The temperature has been around 40* when we wake up which is totally bearable, and running first thing gets me so energized for the day!  We did a 2-mile ultra hilly route that I love because even though its short, I feel like I still get a killer workout in.  The Charlottesville 10-Miler is one of the hilliest races in the country, so we have to be prepared for it! On to eats... Breakfast:  1 cup of Kashi Heart 2 Heart, 1 sliced banana, 1 cup of Silk plain soy milk and some dribbles of cranberry ketchup...YUM!  I love tart fruit in my cereal, oatmeal, pancakes, bread, so it just made sense to add the CK to my bowl of cereal this morning.  I loved it!  It looks kinda scary though... 081218-b1 Morning Snack:  My breakfast was yummy, but it definitely didn't stick with me as long as oats or an ezekiel muffin do...probably because I don't put nut butter in my cereal.  So at about 10:30 I broke into my Clif Mojo Mountain Mix bar and ate 1/2.  This was my first time trying this flavor and it was really good, but I still prefer the Peanut Butter Pretzel flavor. 081218-s2 Lunch:  I continued my CK love with a giant spinach salad topped with alfalfa sprouts, cucumber, yellow bell pepper, black beans, broccoli slaw and glops of cranberry ketchup for dressing. Again, YUM!  Erin's right, it really is good on everything! 081218-l1 Afternoon Snack:  The other 1/2 of my Clif Mojo and a glorious navel orange...it got me so excited to go to Florida!  I want to come home with bags full of citrus!  :-)  After I ate my orange I realized how good the cranberry ketchup would be drizzled on it...next time! 081218-s1 Evening Snack:   Before dinner, while wrapping presents, I finished off a box of Annie's Honey Bunnies.  They were gone so fast I didn't even have time for a picture...apparently I was starving. Dinner:  Leftovers!  Perfect for this busy night.  Veggie tofu korma with broccoli on the side.  The korma was even better the second time around!  And, a glass of Charles Shaw Coastal Syrah...so so good for only $4.99!!!  I love Trader Joes!!! 081218-d15 I have some more Christmas prep to finish...I can't believe how I've waited 'till the last minute this year!  Not next year, I'm already planning our gifts for Xmas 2009.  I loved hearing about what you all are making for Christmas presents this year!  Its totally inspiring...I had planned to make a lot more gifts but time just got away from me.  I have done a little knitting, a little baking, and the hubb and I made a couple of photo albums.  Maybe next year we'll have an "all hand-made" or "all local" theme...that would be fun! quick eats and cranberry ketchup!

Hello fellow bloggies!  Can you believe we're so close to Christmas!?!  Yikes!  Another quick recap...  Breakfast:  1/2 cup plain Oikos with 1/2 cup TJ's pumpkin spice granola and one sliced banana. 081217-b1 Morning Snack:  Breakfast didn't stick with me 'till lunch time, so I dug a chocolate chip Clif ZBar out of my drawer at the office and ate 1/2. Lunch:  Whole wheat pita stuffed with TJ's edamame hummus, cucumber, yellow bell pepper, alfalfa sprouts and broccoli slaw, along with a cup of TJ's Veggie Lentil soup. 081217-l1 Afternoon Snack:  The other 1/2 of my ZBar and a Minneola Tangelo...yummy.  :) 081217-s21 Dinner:  Veggies and tofu simmered in TJ's Korma Sauce on top of jasmine rice with a side of steamed broccoli. 081217-d4 This sauce was really good.  The hubb and I love Indian cuisine so I was excited to find this sauce at Trader Joe's last week... 081217-d1 We pan-fried the tofu similarly to this method, but cut into smaller pieces and without the glaze at the end.  Once the tofu is brown on both sides, we added chopped onion and carrot and let it all saute together for 5-7 minutes. 081217-d2 When the onion and carrots were soft, we added a can of drained chickpeas and the jar of Korma sauce. 081217-d31 On top of jasmine rice it was sooooooo tasty.  :) Dessert:  One beautiful peanut butter filled date. 081217-d5 And I worked on some Christmas gifts!!!  I finally made the Cranberry Ketchup that Erin has been raving about...she sent me the recipe a few weeks ago and tonight I finally had a chance to make it up! Let me tell you all....It. Is. Awesome.  I plan to eat it on everything for the next few weeks.  I was planning to actually can the ketchup to preserve it for months, but started reading up on canning and became worried that I might give my loved ones botulism by incorrectly preserving their Christmas gift.  So, instead, the ketchup will be given to a select few of our Charlottesville friends with a friendly tag reminding them to keep it refrigerated and use it within 3 weeks...  :) cran-1 081217-cran-2 Are any of you making Christmas gifts this year?

What a day.  My brain is completely fried after an exhausting + frustrating 9 hours in the office.  I'm so glad that the hubb and I got up and ran this morning, there is no way I would have felt up to it tonight!  We ran a lovely 2 miles, with 1/4 mile warm-up and cool-down, for a total of 2-1/2 miles.  We're finally sticking with the weekly mileage in the training program so there will be a bigger difference between our long Saturday runs and our mid-week training runs.  We are bumping to 4 days of running per week too, up from 3, which I'm excited about!  I did pop my favorite power yoga dvd in the player for 45 minutes of strength training after work, followed by 15 minutes of crunches.   Here's a quick daily eats recap: Breakfast:  An Ezekiel cinnamon raisin muffin with 1 tbsp almond butter and a banana. 081216-b1 Lunch:  A whole wheat pita stuffed with 2 tbsp TJ's edamame hummus (YUM!), broccoli slaw, yellow bell pepper and cucumber, along with an Oikos blueberry yogurt.  This was my first blueberry Oikos experience...I literally got THE LAST OIKOS on the shelf at Harris Teeter.  Below the empty shelf was a sign that explained that they wouldn't be stocking Oikos for a short period due to a manufacturing problem.  I guess I owe my Whole Foods a blog apology for ranting about them last week...   :P  Anyway, the blueberry was pretty tasty but I really miss my honey flavor!!! 081216-l1 081216-l2 Snack:  A 12oz skim latte from my favorite coffee shop downtown and 1/2 a honeycrisp apple.  This apple was really disappointing as all my store-bought apples have been lately, I guess the season is finally over...  :( 081216-s1 Dinner:  Baked chicken, roasted veggies  (brussels, potatoes + golden beets) and Near East Whole Grain Blends (chicken + garlic). 081216-d1 081216-d2 Dessert:  Definitely breaking back into the chocolate covered strawberries in a little bit... I'm off to do more Christmas prep...we'll be in Florida in 1 week!!!  Yay!!!
